How to brew coffee for two people | Front Street Coffee shares its experience in brewing coffee for multiple people

When brewing coffee, most of the time we use about 15 grams of powder to brew it, but sometimes you are not the only one drinking it! If there are two or more people drinking it, how should we brew it? Qianjie Coffee would like to share with you what should we pay attention to when brewing coffee for two people?

Let’s take the Geisha Village Chaka beans from the Old Street Coffee as an example and make a pot for two people!

[Gesha Village Chaka] This bean comes from the Gesha Village in Benchmaj, Ethiopia. It is a Gesha blend produced by the Gesha Village Estate, consisting of Gori Gesha, Gesha 1931 and Illubabor. The sun-drying method makes this bean more flavorful! Front Street Coffee uses light roasting to show its aroma and citrus acidity.

Front Street Coffee cupping flavor: It smells floral and lightly fermented, and when you sip it, you'll notice citrus, berries, cream, oolong tea, and cane sugar.

Front Street Coffee brewing parameters for two people:

Filter cup: key diamond filter cup; powder amount: 25 grams; grinding degree: medium grinding (BG 6M: China standard No. 20 sieve pass rate 48%); water temperature: 89℃; powder-water ratio: 1:15; brewing method: segmented extraction.

Use 51 grams of water for steaming (the amount of water for steaming is just enough to wet the entire coffee grounds bed, which is basically twice the amount of powder). When you see the surface of the powder bed changes from wet to dry, you can stop steaming. The steaming time is about 30 seconds. Use a small stream of water to circle around the middle and pour water to 145 grams. When the water level drops and is about to expose the powder bed, slightly increase the water flow and continue to circle around to pour water to 270 grams. When the water level drops and is about to expose the powder bed, use a larger water flow to directly pour water to the center to 375 grams. When the water level drops and is about to expose the powder bed, remove the filter cup. (Start steaming) The extraction time is 2'26".

Flavor: The wet aroma has a light fermentation aroma and tea aroma. When the temperature is high, it tastes like oolong tea, caramel sweetness and cream. When the temperature drops, it has the sourness of citrus, berries and grapefruit.

Analysis of Front Street Coffee Brewing Parameters:

1. Filter cup! When choosing a filter cup, Qianjie Coffee chooses a diamond filter cup with a faster flow rate. The diamond filter cup has diamond-cut edges and a relatively large water outlet in the center. The diamond-shaped pattern can make the flow rate more uniform; the large circular hole in the center of the filter cup can increase the flow rate and compensate for the uneven extraction to a certain extent;

2. Powder quantity! When brewing a single serving of coffee, Front Street Coffee will choose to use 15-16 grams of powder, and the powder-water ratio is 1:15-1:16. If brewing coffee for two people, Front Street Coffee will choose to add 10 grams of coffee powder to the single serving (15 grams), that is, choose to use 25 grams of powder;

3. Grinding degree! As the amount of powder increases, the thickness of the powder layer will also increase. When the powder layer becomes thicker, the flow rate will naturally slow down. If we brew according to our normal 15g powder grinding degree, over-extraction will occur, so we can adjust it to a coarser level;

4. Water temperature! As the amount of coffee powder increases, the extraction time will also increase. Therefore, in order to avoid over-extraction of coffee powder, Qianjie Coffee recommends choosing a lower water temperature for brewing to reduce the extraction rate of coffee powder;

5. Technique! Qianjie Coffee chose a three-stage brewing method after steaming. In the last stage, a large water flow is directly injected into the center because it is easy to extract some impurities in the later stage of brewing. Therefore, Qianjie Coffee chooses to use a large water flow to inject into the center to reduce the occurrence of over-extraction caused by stirring of the water flow.
