Instant coffee does contain acrylamide. In fact, when the heating process such as baking and frying exceeds 120°C, acrylamide will be produced in the food, and the higher the temperature and the longer the heating time, the more acrylamide will be formed. Therefore, including potato chips, French fries, barley tea, and stir-fried dishes, whether fried or not, as long as the degree of heating is sufficient, acrylamide will be produced.

In 1994, the International Agency for Research on Cancer classified acrylamide as a Class 2A carcinogen, meaning it is potentially carcinogenic to humans, but there is still a lack of epidemiological evidence.

Relatively speaking, the acrylamide released when cigarettes are burned is the lowest. However, the two cannot be simply compared, because the former is a heat-processed food, while the latter is a tobacco product, with different properties. If we must "compare", then smoking has the greatest risk of cancer, which has long been confirmed by the World Health Organization.

As early as 2009, the World Health Organization listed cigarettes and arsenic as "high-risk carcinogens with equal lethality." The WHO not only bans smoking, but also "other forms of tobacco advertising, promotion and sponsorship." Acrylamide in instant coffee is at best a "potential carcinogen." Moreover, most people cannot drink instant coffee more frequently than they smoke.

Therefore, the statement that "instant coffee is more carcinogenic than cigarettes" is exaggerated and is not true at all.

Instant coffee has little cancer risk

But it is recommended to drink less

So, since the risk of cancer from instant coffee is low, can we drink it frequently? Experts say that although the risk of cancer from instant coffee is low, it does not mean that we should drink it without restraint.

The Ministry of Health has long said that it recommends that citizens reduce their intake of foods containing acrylamide. The acrylamide content of these foods is in the following order: potato fried foods, grain fried foods, grain baked foods, and other foods. Although instant coffee ranks at the bottom, it should not be taken lightly.

So, what is the appropriate range of acrylamide intake per day? The 2015 edition of the Dietary Guidelines for Americans shows that there is sufficient evidence to support that drinking 3 to 5 cups of coffee a day is a healthy diet and can even reduce the risk of type 2 diabetes and heart disease.

But it is worth noting that if you drink coffee like water and consume too much caffeine, your brain will change from excitement to inhibition, and you are likely to become depressed.

After drinking coffee, people will feel particularly excited and refreshed, which is entirely due to the large amount of caffeine contained in coffee. Caffeine has a strong bitter taste and can stimulate the central nervous system, heart and respiratory system, making people forget fatigue and become excited.

However, according to a Japanese study, the instant coffee we drink may not refresh people even if they drink more than five cups a day, depending on their physical condition. This is because instant coffee has been separated from the original concentration of coffee beans, and other flavor-enhancing cream, syrup, coffee creamer, etc. are added. The real coffee content in a cup of instant coffee is only about one-fourth to one-third of the original ground coffee .

After the concentration of caffeine is reduced, the refreshing effect of instant coffee is greatly reduced. Just like drinking green tea can relieve fatigue, but the green tea drinks on the market do not have the same effect. Of course, it cannot be denied that some people with more sensitive nerves can be refreshed even after drinking instant coffee.
