Coffee is one of the most popular drinks in the world, and coffee beans are the key ingredient in making coffee. Before making coffee, coffee beans need to go through a roasting process. However, some people also like to try unroasted green beans. This article will explore the differences between roasted and unroasted coffee beans.

1. Appearance

First of all, we can distinguish roasted and unroasted coffee beans by appearance. Roasted beans are usually dark brown or black, and have a shiny surface. In contrast, unroasted green beans are light yellow or light brown, and have no luster.

2. Aroma

Another obvious difference is the aroma. When coffee beans have been completely, properly and precisely processed (i.e. processed at high temperatures) and have reached the ideal level, they will emit a unique aroma before consumption. This aroma is produced by chemical reactions inside the coffee beans, including caramelization and Malad reaction. In contrast, unroasted green beans have no obvious aroma.

3. Taste

The taste of coffee beans will change after they are roasted. Generally speaking, light or medium roasts (such as light city or city) will make the coffee taste more sour, light, and retain more of the original flavor; while dark roasts (such as French, Italian or Spanish) will make the coffee more bitter, stronger, and sometimes have some burnt flavors.

The last difference is storage time. Coffee beans that have been fully processed and reached the ideal level can be stored for a long time without much change in taste. In contrast, unroasted green beans need to be used in a shorter period of time because they are susceptible to moisture, mold and deterioration.
