1. Source of raw materials

Globally, there are two main varieties of plants used to produce black coffee: Arabica and Robusta. Arabica is the most common and popular variety, with higher quality and lower content. Robusta has a stronger and bitter taste.

These plants are usually grown in Asia, Africa, Central and South America, and require specific climate conditions to grow well. They need moderate sunlight, warm and humid conditions, and moderate altitude.

2. Harvesting and processing

When coffee cherries are ripe, farmers pick them by hand. Coffee cherries are usually red or yellow berries that contain two coffee beans inside. These beans are called "coffee seeds" and they are the raw material for black coffee.

After picking, farmers process the coffee cherries to obtain clean beans. There are two most common processing methods: wet and dry.

The wet processing is to soak and ferment the picked coffee cherries in water, then use mechanical equipment to remove the outer pulp and finally obtain clean beans.

The dry process involves directly drying the whole coffee cherries in the sun, and then shelling them when the outer skin becomes dry and easy to peel off.

3. Baking

The processed green beans need to be roasted to become the black grains we know and use. During the roasting process, the green beans are exposed to high temperatures and gradually change their color, shape and taste characteristics.

Roasting time and temperature are important factors affecting the taste of coffee. Different degrees of roasting will produce different flavor characteristics, from light roasting to dark roasting, corresponding to changes in acidity, bitterness and sweetness.

4. Grinding

Before making black coffee, you need to grind the roasted beans. This process can be adjusted according to personal preference to suit different brewing methods (such as drip, French press, etc.).

Generally speaking, coarser particles are better for long immersion brewing methods, while finer particles are better for quick filter brewing methods. The quality of the extract and taste characteristics of the coffee can be changed by controlling the degree of grinding of the beans.

5. Brewing

The last step is to brew the processed coffee beans, which have been ground into the appropriate particle size, with water. This process is usually completed using specially designed equipment or tools (such as coffee machines, hand-brew pots, etc.).

Factors such as brewing time, water temperature and ratio will affect the taste of coffee. Proper control of these parameters can make the coffee achieve the best flavor effect.
