Coffee bean processing: a perfect process from picking to roasting

Coffee bean processing: a perfect process from picking to roasting

pick

The coffee bean processing begins at the picking stage. Before the coffee beans mature, farmers will carefully observe the color and size of the berries on the coffee trees to determine the best time to pick them. Generally speaking, when the coffee berries are bright red, they are ripe. Picking at this time can ensure high-quality coffee beans.

Peeling

Once the picking is complete, the next stage is the peeling stage. Farmers will process the fresh coffee cherries into a peeling machine. This machine separates the pulp from the hard inner shell by rotating or vibrating it and collects it into a container.

Fermentation

After peeling, the remaining pectin and mucilage need to be removed to improve quality. To achieve this goal, farmers will collect the pulp and put it into fermentation tanks for fermentation. The fermentation time is usually 24 to 48 hours.

Wash

After fermentation is complete, the next step is the washing stage. Farmers will put the fermented coffee beans into a sink and wash them thoroughly with clean water. This process can not only remove residual pectin and mucus, but also clean the impurities on the surface of the coffee beans.

Dry

After washing, the coffee beans need to be dried to remove excess water. Farmers will spread them out in a cool and ventilated place to let the natural wind dry them. This process may take days or even weeks to complete.

Screening and grading

Once the coffee beans are completely dried, the next stage is the screening and grading. Farmers use sieves of different sizes to sort the beans by size and perform visual inspections to ensure that only high-quality beans are selected.

Baking

The last key step is the roasting stage. In this stage, the carefully selected and processed coffee beans are sent to a special roaster for processing. Temperature, time and fire control are very important, and different roasting degrees are produced at different stages, ranging from light roasting to dark roasting.

Conclusion

Through the above perfect process, coffee beans complete a delicate and complex processing from picking to roasting. Each step has an important impact on the taste and flavor of the final coffee. Only coffee beans that have been strictly controlled and carefully processed can bring delicious coffee with rich aroma and taste to our top ten coffee bean brands in the world.
