Learn a coffee every day: Cafe Mocha

Cafe Mocha is a variation of Italian latte. Like classic Italian latte, it is usually made of one-third espresso and two-thirds milk foam, but it also adds a small amount of chocolate. Chocolate is usually added in the form of chocolate syrup, but some coffee sales systems use instant chocolate powder instead. The name of Mocha coffee originated from the Yemeni town of Mocha on the Red Sea. This place monopolized the export trade of coffee in the 15th century, especially in the Arabian Peninsula.

Mocha coffee (also known as Moka or Mocha, also translated as Arabic premium coffee, and Café Mocha in English, meaning chocolate coffee) is a variation of Café Latté. Like the classic Italian latte, it is usually made with one-third Italian espresso (Caffè Espresso) and two-thirds milk foam, but it also has a small amount of chocolate added. The chocolate is usually added in the form of chocolate syrup, but some coffee vending systems use instant chocolate powder instead. Sometimes, whipped cream, cocoa powder, and marshmallows are added on top to enhance the aroma of the coffee and as a garnish. Unlike Italian cappuccino, mocha coffee is not topped with fresh milk foam. Instead, mocha coffee is usually topped with some whipped cream and either cinnamon powder or cocoa powder. It is also possible to add sunflower candied fruit powder on the surface as a garnish and to increase the flavor. A variation of mocha is the White Café Mocha, which uses white chocolate instead of milk and dark chocolate. In addition to white mocha, there are some variations that use a mixture of two chocolate syrups, which are sometimes called "Zebras" and sometimes humorously called "Tuxedo Mocha". In some parts of Europe and the Middle East, Moccaccino is used to describe Italian latte with added cocoa or chocolate. In the United States, Moccaccino refers to Italian cappuccino with added chocolate.

The name of Mocha coffee originated from the Red Sea town of Mocha, located in Yemen. This place monopolized the export trade of coffee in the 15th century, and had a great influence on the coffee trade to the Arabian Peninsula. Mocha is also a "chocolate-colored" coffee bean (from Yemen's Mocha), which has led to the association of mixing chocolate into coffee and developing chocolate espresso drinks. In Europe, "Mocha coffee" may refer to this drink or just coffee brewed with Mocha coffee beans.

Mocha is named after the famous Mocha Port. In the 15th century, the transportation industry in East Africa was very underdeveloped, but the most precious coffee beans in the world were produced here. These coffee beans were gathered in the Mocha Port in Yemen and shipped to Europe. Today, the Mocha Port has retreated inland due to the accumulation of silt, and emerging ports including Mombasa and Durban have replaced the status of the Mocha Port. However, the origin of Mocha coffee during the Mocha Port period has been preserved, and the coffee beans produced in these origins are still called Mocha coffee beans.

The reason why Mocha coffee beans are so popular is because of its rich taste. The aroma of red wine, wild game, dried fruit, blueberry, grape, cinnamon, tobacco, sweet spices, logs, and even chocolate. Europeans like Mocha coffee very much and have always regarded it as a consumable luxury.

With the birth of Italian fancy coffee, people tried to add chocolate to ordinary coffee to replace mocha coffee. This is the fancy mocha that everyone can often drink today. Italian fancy mocha coffee is made by mixing 1/3 of Italian espresso with 2/3 of hot milk, and then adding chocolate ingredients. Traditional Italian fancy mocha coffee uses chocolate paste as the raw material, and then because mocha coffee is popular, chocolate paste is replaced by chocolate powder in more home-made mocha coffee. In addition to dark chocolate, milk chocolate can also be used as one of the ingredients of mocha coffee today. Unlike the thick milk foam of cappuccino, there is no milk foam on the top of mocha, but fresh cream, cocoa powder and cinnamon are added. Candied fruit is also used as a decoration on the top of mocha coffee.

Therefore, the so-called Mocha coffee is actually a general term for Mocha bean coffee and fancy Mocha coffee. When tasting Mocha coffee, friends must pay attention to this point to avoid ordering a coffee that is not the Mocha coffee they have in mind.

Mocha in Yemen was the main export commercial port near the Red Sea at that time. On the contrary, the ports of Mombasa, Durban, Beiva, etc. in Africa have become some of the emerging coffee export ports in Africa. But at that time, all African coffee that was concentrated in the port of Mocha and then exported was collectively called Mocha coffee.

There are many answers to this question. Some people say that Mocha is a certain place of origin, and some people think that Mocha is sweet chocolate coffee. In fact, authentic "Mocha coffee" is only produced in the Republic of Yemen in the southwest of the Arabian Peninsula, growing on the steep mountainside at an altitude of 3,000 to 8,000 feet. It is also the oldest coffee in the world.

The Moka pot was introduced in 1933. Its structure has never changed, but its appearance and materials have been constantly changing. The earliest Moka pot was made of aluminum, but aluminum easily reacts with the acid in coffee, producing a bad taste. Later, it was gradually changed to stainless steel and even partially made of heat-resistant glass.

The moka pot consists of two parts, the upper and lower parts, which are connected together by rotating. The lower part of the pot is a water chamber with a safety vent at the top of the chamber. Above the chamber is a filter with small holes for coffee powder. The upper part of the pot is a lidded container with a handle for coffee liquid. Below the container is a filter mesh with a rubber ring. In the center is a hollow metal tube that allows the coffee to spray out.

When brewing coffee with a moka pot, first fill the lower chamber with water, but do not exceed the safety vent. Then fill the filter with coffee powder. The filter is carefully designed by experts, so there is no need to measure the amount of coffee powder, just fill the filter. Then put the upper and lower chambers in and tighten them, and then put it on the fire to cook.

The Moka pot is a device that uses high-pressure steam to extract coffee. It is small in size, elegant in appearance, easy to operate, and quick in brewing, so it is very suitable for home use. The coffee brewed in the Moka pot is also called Mocha. Although it is not real espresso, it can be said to be a double-strength coffee.
