Choosing the right coffee beans

First, before you start brewing, you need to choose the right coffee beans. Coffee beans from different regions and types have their own special flavors and characteristics. If you like a strong and bitter taste, then choose single-origin or mixed Arabica beans with a high degree of French roasting (such as Italy and France) produced in Africa, Central America or Asia; If you prefer a softer and acidic taste, then medium-roasted coffee beans (such as Colombia and Brazil) may be more suitable for you.

Preparing hand-ground coffee beans

Once you've chosen the right coffee beans, the next step is to prepare them for hand grinding. Place the desired amount of coffee beans in the hand grinder and adjust the grind size based on the taste and strength you want to achieve. For a coarse brewing method (like a French press), adjust the portafilter to a coarse setting; for a fine brewing method (like a moka pot or espresso machine), adjust the portafilter to a finer setting.

Use the correct water temperature and ratio

Before you start brewing, make sure you use the correct water temperature and ratio. Generally speaking, the optimal brewing temperature should be between 90°C and 96°C. If the water temperature is too low, it will result in insufficient extraction; if the water temperature is too high, it will produce a bitter taste. In addition, after calculating the required amount of coffee powder, mix the coffee powder and water in a ratio of 1:15 to 1:18 (coffee powder: water).

Hand grinding brewing

Now you're ready to brew your coffee. First, place a paper or metal filter in the preheated container and place it over a cup or pot. Then, pour the ground coffee beans into the filter and shake it gently to distribute the coffee evenly. Next, slowly pour in a small amount of water (about twice the weight of the ground coffee) and wait 30 seconds to 1 minute for the coffee to expand and release gas.

Then, slowly tilt the container and begin pouring the remaining water evenly. Try to keep the pouring rate steady and avoid a funnel effect (i.e. a small hill in the middle). Adjust the pouring rate and angle depending on the brewing method used and your personal taste preference.
