A few days ago, I was on a business trip and ate a coffee cake in a store with a friend. I couldn’t forget it after I came back. Then I kept searching and experimenting on the Internet, and I found such a recipe. We made some modifications based on his recipe. I would like to thank this netizen for sharing his recipe!

Now we will start making this coffee cake . First, preheat the oven to 180/160 upper and lower heat. Put it in the middle and lower layers when baking. Different ovens are different, so everyone should pay attention to observe. In addition, coffee is liquid coffee and must have a certain temperature, about 45 degrees.

【Ingredients for coffee cake】

300 g sugar

· 300g low-gluten flour

Baking soda: 4.5 g

Baking powder: 5.5 g

Room temperature whole eggs: 2

Room temperature milk: 220 g

Corn oil or soybean oil: 120 g

Liquid coffee: 180 g

【Coffee Cake Operation】

1. Put sugar, flour, baking soda, baking powder, eggs, milk, and oil into the mixing bowl in order. Be careful not to add coffee first.

2. Add hot coffee, the temperature should be around 45 degrees, not too high. The coffee can be mixed according to your preference, as long as it is adjusted into liquid as required.

3. Prepare 3 cake molds, cover the bottom with baking paper, and spread a thin layer of butter on the edges. Note that this butter is not liquid, but you can use a tool to directly apply some solid butter on it, then sprinkle some flour on the wall. This flour is not in the recipe, and it is best to use cooked flour. This step is best prepared in advance.

4. Pour the batter mixed evenly into 3 molds evenly. The size of the mold can be determined according to what you have. You don’t need to buy it specially, but make sure the depth of the batter is more than 2CM.

5. Shake the mold to eliminate the bubbles inside, put it in the preheated oven, bake for 20-35 minutes, check it is done, cool it down slightly after it is baked, remove it from the mold, wrap it with tin foil and put it in the refrigerator for later use. Be sure to refrigerate it first, otherwise the cream will melt easily.

The cake base is ready, now we start making the cream for spreading on it.

【Ingredients for coffee cream】

Unsalted butter: 200g

· Powdered sugar: 350 g

Coffee powder: 8 grams

Hot water: 10 g

【Coffee cream operation】

1. Don't use the three-in-one coffee powder. Use common Nestle coffee powder. Mix it with boiling water to make strong coffee liquid, and let it stand to cool slightly for later use.

2. Put butter and powdered sugar in a mixing bowl and start mixing with mixer.

3. Add the coffee liquid in portions and continue stirring until all has been added. At this point the cream is evenly colored but not very smooth and delicate.

4. Take out three coffee cakes and smooth the surface with a knife.

4. First, choose a piece of cake, spread a layer of coffee cream on it, and then put the second layer of cake on it... until everything is stacked up.

5. The last thing to do is to spread coffee cream all around and on the surface of the cake. We don’t have to worry about it not looking good when we eat it at home, the main thing is that it tastes good.

6. Finally, you can make some small decorations according to your own preferences. The original sharer of this cake used coffee beans as decoration. I suggest that friends who like it can change it to their favorite nuts for decoration, but don’t use fruits, otherwise it will be difficult to have the taste of coffee.
