Grinding and Proportioning

Next, before you start hand pouring, make sure you have a high-quality coffee bean grinder that can adjust the coarseness and fineness and maintains good stability, durability, easy cleaning and convenient operation. According to the needs of hand pouring, grind the coffee beans into medium-fine powder suitable for hand pouring.

Ratio is one of the keys to making a perfect taste. Normally, we use a ratio of 1:15 to 1:17 of coffee powder to water. For example, if you want to make a 300 ml cup of hand-brewed coffee, you need to use about 18 to 20 grams of coffee powder.

Pre-soak and water injection

Before brewing, please do the pre-soaking step first. Pour a proper amount of boiling water over the filter paper to wet it, and wait for about 30 seconds for the filter paper to absorb enough water.

Next, when pouring in the boiling water, be sure to keep the kettle rotating steadily and evenly to ensure that all the coffee grounds are evenly wetted and extracted. Be careful not to pour in the boiling water too quickly or too slowly, and try to avoid direct contact with the wall of the kettle.

Control extraction time

The extraction time is very important for hand brewing. Normally, we want to complete the entire extraction process between 2 and 4 minutes. If you find that the extraction time is too short, it may be caused by the coarseness of the coffee powder or the speed of water injection is too fast. On the contrary, if the extraction time is too long, it may be caused by the coarseness of the coffee powder or the speed of water injection is too slow.
