Ripeness is crucial to extracting high-quality coffee beans. Therefore, when picking, you need to carefully select only fully ripe and dark red or purple fruits from the trees.

2. Peeling and fermentation

Once harvested, farmers place the fruit in troughs for peeling. This can be done by machine or by hand. The seeds are then separated from the sticky pulp (called the "macerate") that remains.

Next, the seeds are fermented in water. The time and method of fermentation varies by region, but it usually takes 1-2 days. This process helps remove the pulp residue and gives the coffee beans a special flavor.

3. Wash and dry

After fermentation, the beans need to be washed to remove pulp residue and other impurities. Farmers will put them in large tanks and rinse them several times with clean water.

The beans are then laid out in the sun to dry. This process can take days or weeks to completely dry. During this time, farmers regularly turn the beans to ensure they are evenly heated and to avoid mold growth.

4. Baking

Once completely dry, the coffee beans are ready for roasting. This is a critical step as it will directly affect the final taste and flavor.

During the roasting process, coffee beans are exposed to high temperatures, usually between 200-250 degrees Celsius. The roasting time is also important, and different roasting degrees will produce different flavor characteristics.

5. Grinding and Brewing

The final step is to grind the beans and brew the coffee. This can be done using a manual or automatic coffee machine, a drip coffee maker, a French press, etc.

Choosing the right grind size and brewing time is critical to making the perfect tasting coffee. These factors can be adjusted based on personal preference.
