Mo Zhixun said that you should first choose your favorite coffee beans, as different beans produce coffee with completely different flavors. He used Geisha as an example to demonstrate the entire process of brewing a cup of hand-brewed single-origin coffee.

First, you need to weigh the beans with a coffee scale, then pick the beans, and select out the incomplete beans and smaller beans (which may be beans that have not been roasted well). This step plays an important role in preserving the original flavor of the coffee and reducing the interference of unpleasant flavors.

The next step is grinding the beans. If financial conditions allow, Mo Zhixun recommends that you prepare two coffee grinders, one for milk coffee and the other for premium beans, to avoid mixing up the flavors of the coffee beans.

In the process from beans to powder, the effective substances in coffee are constantly evaporating. Therefore, he suggested that the entire process from coffee beans to ground coffee powder, and then from coffee powder to brewing a cup of coffee should be controlled within five minutes.

Although the brewing water temperature for different coffee powders is slightly different, under normal circumstances, the recommended water temperature for brewing coffee is around 90 degrees Celsius. You can wash the filter paper first, and then brew the coffee using the circular motion technique commonly used for hand-brewed coffee.

Regarding the amount of coffee beans and the final brewed coffee, Mo Zhixun added, "10 grams of beans may only have 3 grams of material that can be dissolved. This is related to the grinding degree of the coffee beans and the brewing time. Therefore, usually 20 grams of coffee powder can brew a maximum of 260 ml of coffee."

After the coffee beans are roasted, in order to ensure the best flavor, it is best to use them within 1-2 months.
