Especially for guests who drink beverages at night, I always hear them say: I can't drink coffee, otherwise I will suffer from insomnia again. I can't help but ask, is coffee really that stimulating?

In fact, good coffee is not that stimulating. Of course, it depends on your physical condition and the quality of the coffee you drink. Today we will analyze in detail whether drinking coffee will make you unable to sleep all night?

First : In a normal person's physique, after drinking coffee, the half-life of caffeine in the body is about three hours. After the half-life, the stimulation to the body or nerves is almost negligible. If you drink a lot of water and drain water after drinking coffee, the caffeine may not stay in the body for more than two hours. How can it keep you awake all night?

Second, we need to conduct a detailed and professional analysis of the quality of the coffee we drink.

Coffee contains various ingredients, and extraction does not mean that all of these ingredients are extracted. There is usually such a rule: if the amount of coffee powder is fixed, the amount of soluble ingredients extracted is determined by the grinding degree and time. The finer the grinding degree of the coffee powder, the longer the extraction time, and the more ingredients you get. According to experiments, if all the ingredients that can be extracted from a certain amount of coffee powder are extracted, up to 30% of the ingredients can be extracted. But not all of these ingredients are what we need. There are ingredients we need and ingredients we don't need in coffee. The longer the extraction time, the easier it is to extract the bad ingredients we don't need.

In other words, incorrect operation or incorrect coffee extraction will cause the precipitation of irritating substances.

Among these ingredients, the most important one that we don't need is "tannin", which should be called tannic acid. It contains 8% to 9% in raw coffee beans and 4% to 5% in roasted beans. Like caffeine, it has the property of being decomposed at certain roasting degrees. When roasted to a depth of about French or Italian roasting, 90% of tannin will be decomposed.

Most people think that deep roasted coffee is more stimulating and light roasted coffee is less stimulating. This idea is completely wrong. If you mistakenly think that light roasted coffee is less stimulating, drinking it before going to bed will definitely keep you awake until dawn! As the roasting degree gets deeper, the caffeine and tannin content decreases. The irritation will also decrease. Don't be fooled by the color of the coffee.

The tannins we don’t want to extract are also the culprit for the astringency of coffee. Tannins are both angels and demons. A small amount of tannins can bring out the sweetness and mellowness of coffee, and a small amount of coffee tannic acid also has a wide range of antibacterial effects! However, if the coffee is roasted incorrectly, or roasted too lightly and extracted incorrectly, the amount of tannins will increase, and the demon will come into play, not only making the coffee full of astringency, but also keeping you awake all night.

The irritation of coffee is not only caused by the coffee maker or roaster, but also by the drinker's wrong drinking method. Coffee needs to be drunk quickly, preferably while it is still warm. The irritation of coffee is often released as the temperature of the coffee drops.

Therefore, good coffee, that is, under the premise of correct roasting, correct operation, correct extraction, and timely drinking, can reduce the irritation of tannins or caffeine, and even if you drink coffee at night, it can also allow you to sleep well.
